You don’t want to mess with this classic. It’s best when prepared in the most traditional fashion, using demerara sugar.
MAKES 1 DRINK
2 tsp raw sugar, preferably demerara
11/2 oz [45 ml] Irish whiskey
6 to 8 oz [180 to 240 ml] hot coffee
Whipped Cream (page 25), for topping
Put the sugar in an Irish coffee glass. Add the Irish whiskey and coffee, leaving 1 in [2.5 cm] of space at the top. Top with whipped cream.
