This traditional Norwegian punch gets its name from an old toast—it literally means “be in good health.”
MAKES 8 DRINKS
1 cinnamon stick
6 cloves
6 whole allspice berries
48 oz [1.4 L] apple cider
16 oz [480 ml] cranberry juice
3/4 oz [23 ml] Simple Syrup (page 23)
4 oz [120 ml] Calvados
4 oz [120 ml] brandy
1 Pippin or Granny Smith apple, quartered, cored, and thinly sliced, for garnish
Wrap the spices in cheesecloth and tie with string. Place the apple cider, cranberry juice, simple syrup, and spices in a stockpot, bring to a simmer over medium heat, and cook for 8 to 10 minutes. Add the Calvados and brandy, and cook for 1 to 2 minutes. Remove the sachet. Serve in heatproof cups, topped with an apple slice.
