Homemade Ketchup

When my dad was diagnosed with Myasthenia Gravis disease, he was prescribed a high-dose steroid. To help him reduce the potential side effects associated with this drug, I immediately began trying to reduce salt and sugar levels in his foods, including condiments. Not only is this ketchup healthier, it also tastes really good and is easy to make.

2 (8-ounce) cans no-salt-added tomato sauce

½ cup all-natural no-sugar-added apple juice

2 tablespoons sweetened dried cranberries

6 tablespoons honey

1 teaspoon apple cider vinegar

Combine the tomato sauce, apple juice, cranberries, honey, and vinegar in a small saucepan over medium heat. Cook for 10 minutes, stirring occasionally. Transfer the mixture to the bowl of a food processor and process until smooth. Return the mixture to the saucepan and cook over medium-low heat for an additional 10 minutes. Let cool and then refrigerate for up to 1 week.
