While I was visiting China with my mom, a bubble tea shop caught our attention, and of course we had to purchase a milk tea to share. After sampling various flavors, my mom discovered her favorite was coconut milk tea. Wanting to re-create this taste for her at home, I brewed green tea and experimented until I found that the perfect ingredient to get that creamy coconut flavor was coconut milk.
2 cups strong brewed green tea
8 tablespoons pure cane sugar
2 cups canned coconut milk
Combine the green tea and cane sugar in a 4-cup measuring cup. Stir until the sugar dissolves. Chill in the refrigerator for at least 1 hour. Place the coconut milk in the refrigerator at the same time. Blend the green tea mixture with the coconut milk until combined and frothy. Serve chilled.
Makes 4 servings.
