CRAB AND ARTICHOKES

This quick recipe comes from the River Café, a very, very famous restaurant in London, by way of my sister-in-law Clara, who adapted the idea to suit her own busy schedule. A container of lump crabmeat is no bad thing to toss into your shopping cart: tasty, responsible, plentiful, and about 87 calories per 3½-ounce/100g serving.

3 raw baby artichokes

Grated juice and zest of 1 lemon

31/2 ounces/100g crabmeat

1 teaspoon minced garlic

2 teaspoons minced chives

Salt and pepper

11/2 teaspoons good-quality olive oil

31/2 ounces/100g baby arugula leaves

Remove the tough outer leaves and slice the the artichokes as thin as possible. (A mandoline works well.) Toss with the lemon juice to prevent discoloration. Mix with the crab, garlic, chives, lemon zest, salt and pepper, olive oil, and a generous handful of arugula leaves. Serve right away.
