A favorite quick supper at my sister-in-law Clara’s house—one of those eat-from-the-bowl winners that take the sweat out of cooking.
Serves 2
2 leeks, washed and sliced into 11/4-inch chunks
3/4-inch piece fresh ginger, peeled and grated
1/4 red chile, seeded
1 clove garlic, minced
Juice of 1 lemon
11/2 teaspoons olive oil
31/2 ounces/100g shrimp, precooked or raw, peeled and deveined
Salt and pepper
A large handful of fresh cilantro, chopped
Place the leeks in a steamer and cook for 4 to 5 minutes, till tender. Combine the ginger, chile, garlic, and lemon juice in a mini food processor (or chop finely by hand). Sauté the paste in the olive oil for a couple of minutes before adding the shrimp. Cook till the shrimp are fully heated or done to your liking. Add the leeks and mix through. Season, sprinkle with cilantro, and serve.
