CARROT AND GINGER SOUP

Very low in calories, very pretty, very been-there-done-that—till you bring in star anise, cinnamon, cumin, and ginger. Then? Ka-pow.

Serves 2

1 onion, diced

1 teaspoon sunflower oil

1 star anise pod

1 teaspoon grated fresh ginger

31/2 ounces/100g carrots, grated

1/2 cinnamon stick

21/2 cups/600ml vegetable stock

Cumin seeds and fresh cilantro leaves, for serving

Sweat the onion in the oil in a saucepan with the star anise and ginger. Add the carrots, cinnamon, and stock and simmer for 15 to 20 minutes. Remove the star anise and cinnamon and puree the soup in the pot with a stick blender. Serve with a scattering of cumin seeds and fresh cilantro leaves.
