Pancakes are something we should have more often than just on Shrove Tuesday, but for many of us this is the only time we will make them. This is a shame as they make a versatile carrier for all sorts of sweet and savoury dishes. They certainly have a place alongside the pitta and tortilla.
At this time of year, the fresh fruit and vegetable selection can be a little limiting, but preserves and store-cupboard ingredients can certainly elevate the pancake. One fresh fruit that crosses over from January into February is the blood orange, and these, along with some marmalade and sweetened whipped cream, make a sticky, sweet-and-sour filling. If a savoury pancake is your preference, I would reach for leeks, Parmesan and prosciutto.
