Tybee Tea Cocktail

I’ve seen versions of this delicious cross between a mint julep and an Arnold Palmer called the Country Boy, Tipsy Arnold Palmer, and even Lil’ Ass Kicker. When we joined several other couples to throw an engagement party hoedown for our dear friend’s daughter, we made our own version and called it Tennessee Tea in honor of the happy couple’s new home. The result? The millennial crowd stampeded to get at it. Here’s my own version, made with James T’s iced tea, store-bought lemonade, and a mint simple syrup. I call it Tybee Tea. You’ll call for another round!

1 large bunch fresh mint, divided

1 cup sugar

2 qt. James T’s Secret Iced Tea

2 qt. lemonade

Lemon slices for serving

1. Wash the mint. Coarsely chop enough mint (including stems) to equal 1 cup. Set aside the remaining mint for garnish.

2. Combine the sugar and 1 cup water in a small saucepan. Bring to a boil and cook until the sugar dissolves. Remove from the heat, add the chopped mint, cover, and let steep for 1 hour. Pour through a fine wire-mesh sieve into a clean jar or bowl, and discard the mint.

3. Combine the iced tea and lemonade in a large pitcher, punch bowl, or glass drink dispenser. For each drink, fill an old-fashioned glass with ice, add some of the tea mixture, stir in 1 teaspoon mint syrup and a splash of the bourbon, and garnish with the reserved mint and a lemon slice. Serve. Marinated Shrimp
