1. To make the topping, place the cookies in a zip-lock bag and crush them with a rolling pin into coarse crumbs.
2. Place the crushed cookies, flour, spices, and butter in a large bowl. With a fork or your fingers, crumble the ingredients together until the mixture has the consistency of pea-size clumps. Set aside.
3. Preheat oven to 375°F. Butter an 8½ x 11-inch glass baking dish.
4. Peel and core the apples. Cut them into ¼-inch slices, then cut the slices into wedges.
5. In a large bowl, toss the chopped apples, flour, sugar, and cinnamon together. Place the mixture in a baking dish.
6. Top the mixture with the crumble topping, making sure to completely cover the apples.
7. Bake for 30 to 35 minutes, until the topping begins to brown and the apples are bubbling.
8. Serve warm with vanilla ice cream or whipped cream.
