Panakacakes

It’s a good thing the palace tower wasn’t actually made of these delicious, peanut-buttery cakes. Amidala and Panaka may not have been able to resist a nibble, and would have been delayed in their efforts to capture the viceroy.

Serves 6

INGREDIENTS

cups flour

¼

cup brown sugar

teaspoons baking powder

¼

teaspoon salt

1

stick cold butter, cut into small pieces

¼

cup creamy peanut butter

½

cup milk

1

egg

Whipped cream or vanilla ice cream

Your favorite chocolate sauce

1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. In a large bowl, sift the dry ingredients together.

3. With a fork or your fingers, crumble the butter and dry ingredients together until a coarse meal forms. (Pieces of butter are okay.)

4. In a small bowl, whisk the peanut butter, milk, and egg together until smooth. Pour into the dry ingredients and mix with a fork just until dry ingredients are moistened. Do not overmix.

5. Pour the dough onto a floured work surface and press dough into a rectangle, ¾ inch thick. With a knife, cut the rectangle into eight small rectangles. Transfer the small rectangles to the baking sheet with a spatula.

6. Bake for 20 minutes, or until light brown.

7. Serve with whipped cream or vanilla ice cream and chocolate sauce. You can also stack the shortcakes one on top of the other, layering the chocolate sauce and whipped cream between them. Then, with a serrated knife, cut slices from the Panakacake “wall” and serve.
