Armadillo Eggs

Makes 16

16-oz. jar whole jalapeños, drained, seeded and sliced lengthwise

2 c. shredded Cheddar cheese

1 lb. ground pork sausage

2 10-oz. tubes refrigerated biscuit dough

Stuff jalapeños with cheese. Divide sausage into 16 small balls; press into thin strips. Place a stuffed jalapeño onto each sausage strip; roll jalapeño in the sausage, pressing firmly. Place wrapped jalapeños on an ungreased baking pan and bake 40 to 50 minutes at 350 degrees, until sausage is browned. Remove from oven; allow to cool 10 minutes. Flatten biscuits; wrap one jalapeño roll in each biscuit and return to pan. Bake at 350 degrees for 10 to 12 minutes, until golden.
