This incredible union of berries, peaches and a sweet cornmeal topping makes the world a better place. There is something so comforting to me about serving this cobbler hot, with the warm berries, juicy peaches and crunchy-on-the-outside, soft-on-the-inside dough on top. Serve this cobbler with your favorite nondairy vanilla ice cream. That hot and cold combo will be the best thing to happen to you all day.
Serves: 6 to 8
2 cups (200 g) fresh blueberries
2 cups (288 g) fresh blackberries
2 cups (288 g) fresh raspberries
2 cups (450 g) sliced fresh peaches
3 tbsp (27 g) cornstarch
½ cup (96 g) vegan sugar
2 tbsp (30 ml) fresh lemon juice
2 cups (240 g) all-purpose flour
½ cup (85 g) cornmeal
1½ tsp (6 g) baking powder
¼ cup (48 g) vegan sugar
1 tsp salt
½ cup (120 g) solid coconut oil
¾ cup (180 ml) nondairy milk
Coarse vegan sugar (optional)
Vegan ice cream (optional)
Preheat the oven to 400°F (204°C). Spray an 11 x 7–inch (28 x 18–cm) baking dish with nonstick cooking spray.
To make the filling, combine the blueberries, blackberries, raspberries and peaches in a large bowl.
Sprinkle the cornstarch, sugar and lemon juice on top of the fruit. Toss to fully coat the fruit.
Transfer the fruit to the prepared baking dish. Set the baking dish aside.
To make the topping, sift the flour in a large bowl. Stir in the cornmeal, baking powder, sugar and salt. Stir to fully combine.
Break the coconut oil up into small pieces with your hands. Drop the coconut oil into the flour mixture. Work the coconut oil into the flour mixture with your fingers until it is evenly distributed and the mixture resembles sand.
Add the milk to the flour mixture a little at a time, stirring to combine. The topping should be the texture and consistency of a biscuit dough.
Drop large mounds of the dough on top of the fruit, covering most of the top of the fruit. Sprinkle the top of the dough with the coarse sugar (if using).
Bake the cobbler for 30 to 40 minutes, or until the dough is baked through and brown on top.
Serve the cobbler warm with the ice cream (if using).
Hot Tip: This recipe works great with any kind of fruit you want to use. Use the same amount of fruit called for in the ingredients. I love to use apples in the fall!
