Chopped Greek Salad with Chicken

Serves 4

1/3 cup red-wine vinegar

2 Tablespoons extra-virgin olive oil

1 Tablespoon chopped dill or oregano (or 1 teaspoon dried)

1 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon freshly ground pepper

6 cups chopped romaine lettuce

21/2 cups chopped cooked chicken (about 12 ounces)

2 medium tomatoes, chopped

1 medium cucumber, peeled, seeded, and chopped

1/2 cup finely chopped red onion

1/2 cup sliced black olives

1/2 cup crumbled feta cheese

Whisk vinegar, oil, dill, garlic powder, salt, and pepper in a large bowl. Add lettuce, chicken, tomatoes, cucumber, onion, olives, and cheese; toss to coat, and serve.
