Serves 5
1 Tablespoon extra-virgin olive oil
4 teaspoons lime juice
1/4 teaspoon cumin
1/4 teaspoon coriander
1 Tablespoon chopped cilantro
2 Tablespoons diced scallions
2 cups cooked quinoa (1 cup uncooked)
11/2 cups (cooked or canned) black beans, rinsed and drained
2 cups diced tomatoes
1 cup diced red bell pepper
Salt and pepper
In a small bowl, whisk together the oil, lime juice, cumin, coriander, cilantro, and scallions; set aside.
Combine quinoa, beans, tomatoes, and bell peppers in a large bowl. Add dressing and toss well to combine thoroughly. Season lightly with salt and pepper as desired.
Serve cold or at room temperature.
