A chef for more than 20 years, Randall Smith is currently Executive Chef at the iconic Clocktower Resort in Rockford, IL. He is a Middle Wisconsin Chef's Association Chef of the Year nominee and winner of the Winnebago County Green Recipe Award. A columnist and contributor for magazines and newspapers, he writes about the importance of using local produce and is a tireless advocate for farmer's markets, CSAs and sustainable farms in Wisconsin and Illinois. In 2006, he visited Ireland to study ways that local foods might be sold and served. He also works closely with the Central Rivers Farmshed, The Wisconsin Local Food Summit and the Midwest Renewable Energy Association.
