Cheesy Spinach

My daughter often serves this comforting favorite at church suppers. There is never any left!

PREP: 10 MIN. COOK: 5 HOURS MAKES: 6-8 SERVINGS


2 packages (10 ounces each) frozen chopped spinach, thawed and well drained

2 cups (16 ounces) 4% cottage cheese

1/2 cups cubed process cheese (Velveeta)

3 large eggs, lightly beaten

1/4 cup butter, cubed

1/4 cup all-purpose flour

1 teaspoon salt

In a large bowl, combine all ingredients. Pour into a greased 3-qt. slow cooker. Cover and cook on high for 1 hour. Reduce heat to low; cook 4-5 hours longer or until a knife inserted near the center comes out clean.
