I use convenient purchased dressing to give a simple salad a big flavor boost. I suggest that you make larger batches of this speedy dish to take to potlucks and picnics.

START TO FINISH: 15 MIN. • MAKES: 2 SERVINGS
1 cup cooked spiral pasta
1/3 cup halved grape tomatoes
1/4 cup quartered sliced cucumber
1/4 cup quartered sliced sweet onion
1/4 cup sliced ripe olives
3 tablespoons grated Parmesan cheese
1/4 cup ranch salad dressing
In a bowl, combine the first six ingredients. Add dressing and toss to coat. Cover salad and refrigerate until serving.
TOP TIP
Vidalia and other sweet, mild-flavored onions are high in sugar and water content and low in tear-inducing sulfur compounds. Because of those properties, these onions are not suited for long-term storage, so you should use them within several weeks after buying them.
