Festive Brunch Frittata

Serves 6

8 eggs

1/2 t. salt

1/8 t. pepper

1/2 c. shredded Cheddar cheese

2 T. butter

2 c. red, green and/or yellow peppers, chopped

1/4 c. onion, chopped

Whisk together eggs, salt and pepper. Fold in cheese and set aside. Melt butter over medium heat in an oven-safe non-stick skillet. Add peppers and onion to skillet; sauté until tender. Pour eggs over peppers and onion; do not stir. Cover and cook over medium-low heat for about 9 minutes. Eggs are set when frittata is lightly golden on the underside. Turn oven on broil. Move skillet from stovetop to oven; broil about 5 inches from heat, until top is lightly golden.

Don’t just think breakfast...use leftover veggies to make savory dinnertime omelets. Fill omelets with sautéed vegetables and shredded cheese...scrumptious! Add a basket of multi-grain English muffins and dinner is served.
