Ingredients:
To fry: oil
Instructions:
1. Heat the oil in skillet up to 350F.
2. Combine curry powder and potatoes thoroughly. Season as desired. Transfer panko, beaten egg and flour in three shallow, separate dishes.
3. Form patties from potato mixture using your hands. Coat patties in flour, shaking off the excess. Dip the patties into egg and cover in breadcrumbs. Press crumbs into patties with your fingers.
4. When oil has reached frying temperature, fry patties on both sides till golden brown in color. Remove them from the skillet. Drain them on paper towels. Serve promptly with your favorite Asian sauce.
