Decorating a cake on the inside is a bit like gilding the lily, but we love a dessert that says “Wow!” twice.
Different-color batters can be added to the baking pan in small dollops. This gives you some control over color and pattern, but the really fun part is that every time you make a dollop cake, the pattern is different. You never know exactly what you’re going to get until you slice the cake. For the Rainbow Cake, we use 5 colors of batter, dolloped in alternating colors, in 2 layers.
