Ingredients: 1 pack of Hickory or Brown Sugar Bacon
1 (large) pack of boneless chicken breast
1 pack of Romaine Lettuce
1 pack of Spinach Leaves
1 small pack of cherry tomatoes (split)
1 Can of Mandarin Oranges
1 Jalapeño Pepper diced
1 pack of almonds or walnuts your choice
½ small Red Onion diced fine
2 Cucumbers (one peeled, one unpeeled)
1 Bottle of French or Raspberry Dressing
1 pack of shredded sharp cheese
2 Boiled eggs (peeled and cut sliced in half)
Directions: Cook bacon until almost crispy. Chop fine. Season the chicken breast with your favorite seasoning and bake or fry, your choice. It would be a lot healthier to bake the chicken or put it on a grill or griddle. Once done dice the chicken up and also combine it into a large bowl with the bacon. In a separate large bowl, add Romaine Lettuce and Spinach leaves tomatoes, Jalapeños, onions and unpeeled cucumbers and toss. Now add peeled cucumbers and toss lightly. Evenly pour ½ chicken and bacon mixture in and toss. Now pour other ½ on top of salad and top with cheese, nuts, drained Mandarin oranges, and eggs. Serve with French or Raspberry Dressing and your favorite soup or crackers.
