Vegetable Chicken Gourmet Rice
Ingredients: 1 large pack of yellow rice mix
1 cup of frozen broccoli spears (optional)
2 cups of mushrooms
1 cup of diced carrots
1 cup of sweet peas (frozen)
1 box of chicken broth
1 Tablespoon of sea salt
1 pack of chicken breast
1 teaspoon of butter sweet salted
2 cups of water
Directions: Season chicken breasts and boil. Dice into medium chunks or shred into strips. Combine pack of rice in large casserole dish with butter, salt, broccoli, mushrooms, carrots, peas, chicken broth, and water. Place in oven on 250 or 300 for 45 minutes to 1 hour and bake until done. (Rice will be fluffy and soft). Rice on the sides may have a crust and looks brown, it is okay. It will do that because it is in the oven and it is in a casserole dish. Do not panic. Do not bake for less than 45 minutes. If you are baking it on the temperature of 250 or 300 unless it is a gas stove then it will need to cook a little longer.
