Cumin and rose lassi
PITTA
Serves 1
125g (½ cup) homemade yoghurt (see here) or yoghurt made from coconut
250ml (1 cup) water
½ tsp groimd cumin
¼ tsp ground ginger
1–2 drops of rose water or ⅛ tsp rose extract
½ tbsp jaggery
1–2 strands of saffron (optional)
rose petals (optional)
1 Place all of the ingredients, apart from the saffron and rose petals, if using, into a blender and blend for 30 seconds until light and foamy. Alternatively, whisk by hand for a few minutes.
2 Skim off any fat that rises to the top and sprinkle with saffron or rose petals, if using.
TIP
•
Coconut is cooling for Pitta but doesn’t combine very well with dairy, so try using yoghurt made from coconut instead.
