Lime and coriander bone broth
When you see the words lime and coriander together in a recipe name you’d be forgiven for thinking that this was going to be an explosion of Mexican flavours, but not so. This soft and comforting broth is a mild-mannered ‘hug in a mug’ and a great recipe for anyone in need of a healthy alternative to a coffee for a 4pm pick-me-up. Based on the popular lemon and coriander soup, I’ve used limes here, which are less harsh and much more cooling. Though they come from the same family, lemons and limes have slightly different characteristics as you can identify from their flavour profiles – limes are slightly more sweet with mild anti-inflammatory properties, whereas lemons can irritate the digestive tract if there is any inflammation already.
In Ayurveda, lime juice and coriander are recommended to improve the appetite and help digestion, making this soup a lovely appetiser. Lime is also useful to aid mineral absorption, help with heartburn and nausea and relieve high blood pressure.
Serves 2
500ml (2 cups) chicken bone broth (see here)
pinch of salt
3 pinches of freshly ground black pepper
small handful of fresh coriander, chopped
1 tsp lime juice
1 To make the bone broth, follow the instructions here.
2 Heat the bone broth with a pinch of salt and the black pepper and allow to simmer for a few minutes. Add the coriander and lime juice, simmer for a further minute and then serve.
