Flax egg

Here is an easy egg substitute which works well in many recipes, including the Chestnut, Carrot and Ginger Muffins (see here) and Teff Waffles (see here). Freshly ground flax works best to make it as thick as possible – you’ll need a spice grinder, coffee grinder or a powerful blender. Just mix and leave to set, moving it to the fridge if it needs help with thickening.

1½ tbsp ground flax

2½ tbsp cold water

1 Mix the ground flax and cold water together in a small bowl. Allow to sit for 5 minutes.
