OVEN “FRIED” POTATOES

       3 pounds medium baking potatoes

       1 tablespoon vegetable oil

       1 to 2 teaspoons chili powder

Preheat the oven to 425 degrees. Coat a large rimmed baking pan with vegetable cooking spray. Cut each potato in half lengthwise, then cut each half lengthwise into quarters. In a large bowl, toss together potatoes, oil, and chili powder until the potato wedges are well coated. Spread potatoes on the greased pan in one layer. Bake for about 20 minutes, or until nicely browned.
