Makes 24 cookies
¼ pound margarine
½ cup firmly packed brown sugar
¼ cup sugar
1 tablespoon soy flour
½ teaspoon vanilla extract
¾ cup unbleached flour
½ teaspoon baking soda
½ teaspoon cinnamon
1½ cups rolled oats (or quick oats)
½ cup raisins
Preheat the oven to 350 degrees. Beat together the margarine and sugars until creamy. Add the soy flour and water and beat well to blend.
In a separate bowl, combine the flour, baking soda, and cinnamon. Add to the margarine mixture and mix completely. Stir in the oats and raisins.
Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10 to 12 minutes, or until light golden brown.
