GREEN TEA COOLER

       2-inch piece of fresh ginger root, cut into quarters

       4 bags green tea

       1 tablespoon sugar

       4 cups of boiling water

       1 bottle ginger ale

Place ginger, tea bags, and sugar in a pitcher. Pour over 4 cups of boiling water. Let steep at least 30 minutes and cool before adding ginger ale. You can make up this “base” and keep in the refrigerator. When ready to serve, add ginger ale (half tea mixture and half ginger ale is a good mixture) and serve with ice and a sprig of mint.
