Makes one loaf (about 20 slices)
Roasted garlic has a mellow flavor and creamy texture that makes delicious fat-free garlic bread.
2 large heads garlic
1 baguette or loaf of French bread, sliced
1–2 teaspoons mixed Italian herbs (optional)
¼ teaspoon salt
Roast the whole, unpeeled heads of garlic in a 400° oven (or toaster oven) until they feel soft when squeezed. This will take about 30 minutes. Reduce the oven temperature to 350°.
Peel the cloves or squeeze them out of their skin, then mash them into a paste with a fork. Mix in the herbs, if desired, and salt. Spread onto the sliced bread. Wrap tightly in foil and bake for 20 minutes.
