Preparation

 

 

1. Melt the butter in a frying pan. Add the crushed/minced garlic and fry for 1 minute.

2. Add the salmon (skin side down if using fillets).

3. Add the juice of the lime and half-lemon, wine and honey. Stir around the salmon.

4. Simmer 3-5 minutes, stirring occasionally, until the salmon is cooked through most of its thickness.

5. Turn the salmon, sprinkle in the chopped coriander/cilantro, turn off the heat and cover the pan.

6. Leave for 2 minutes to allow the residual heat in the pan to finish cooking the fish.
