Banana Nut Muffins

1.  Preheat your oven to 350° Fahrenheit.  Line an 8-cup muffin tin with cupcake liners.
2.  In a mixing bowl, add 3 tablespoons of water along with ground flaxseed and stir.
3.  In another mixing bowl, combine your mashed bananas, applesauce, maple syrup, vanilla, along with flaxseed mixture and mix well.
4.  Whisk together your flour, oats, baking soda, cinnamon, and sea salt.
5.  Add wet ingredients with dry ingredients, then mix well to combine.
6.  Fold in your chopped walnuts.
7.  Add the batter to the prepared muffin tin, filling the cupcake liners about three-quarters of the way.
8.  Bake your muffins for about 18 minutes, or till a toothpick is inserted into the center and comes out clean.
9.  Remove the muffins from the oven, then allow them to cool for 10 minutes.  Serve and enjoy!
Variation Tip:   You can use this batter to make Banana-nut cookies.  Just spoon the batter into about 22 mounds onto a parchment-lined rimmed baking sheet and bake at 350° Fahrenheit for 15 minutes.  Allow cooling for 10 minutes.  Serve and Enjoy!
