One-Pot Instant Lasagna

Love lasagna but not all of the layering—and then waiting for it to bake while hungry kids ask when dinner will be ready? The active prep time on this family-pleasing dish is just 20 minutes—quick and easy enough for any day of the week.

PREP TIME: 20 minutes

CLOSED POT TIME: 25 minutes

TOTAL TIME: 45 minutes

SERVES: 8

  • ½ pound ground beef
  • ½ pound ground sausage
  • 1 16-ounce box mafalda pasta or one 16-ounce package lasagna noodles, broken into 1½- to 2-inch pieces
  • 1 32-ounce jar pasta sauce
  • 4 cups water
  • 8 ounces ricotta cheese
  • 8 ounces shredded mozzarella cheese

PREP

Select sauté on the Instant Pot® and adjust to normal. Add ground beef and sausage to the pot and cook just until browned. When cooking is complete, press cancel. Stir in the pasta, pasta sauce, and the water. Secure the lid on the pot. Close the pressure-release valve.

COOK

Select manual and cook at high pressure for 5 minutes. When cooking is complete, use a quick release to depressurize.

serve

Stir in the ricotta cheese and half the mozzarella (mixture will look curdled from the ricotta cheese). Pour mixture into a baking pan and top with the rest of the mozzarella. If desired, place the baking pan under the broiler for 2 to 3 minutes or until cheese is melted.
