Cacciatore means “hunter” in Italian. Dishes prepared “hunter-style” refer to a common set of ingredients—usually onions, mushrooms, herbs, wine, and tomatoes. The porcini mushrooms in this version of the Italian favorite add earthy, rich flavor to the dish.

PREP
Select sauté on Instant Pot® and adjust to normal. Add oil. Season chicken with salt and pepper. When oil is hot, add chicken. Cook chicken, half at a time, until browned, turning once, for about 7 to 8 minutes.
Meanwhile, place porcini mushrooms in a small bowl and add the boiling water. Let stand for 5 minutes. Drain, reserving liquid. Chop mushrooms.
Remove chicken from pot. Add onion, red sweet pepper, and garlic. Cook, stirring occasionally, until onion is softened, for about 2 minutes. Add wine. Simmer for 2 minutes. Press cancel. Add tomatoes, rosemary, sage, and the bay leaf. Stir in the mushrooms and the mushroom liquid. Return chicken to pot. Secure the lid on the pot.
COOK
Select poultry. When cooking is complete, use a natural release to depressurize. Press cancel.
SERVE
Transfer chicken to a platter; cover lightly with foil to keep warm. Skim fat from cooking liquid. Remove and discard bay leaf. Select sauté and adjust to less. Cook sauce for 10 minutes to reduce and slightly thicken. Press cancel.
Top chicken with sauce and vegetables, olives, and parsley. Serve with pasta, rice, or polenta.
