Sure, you can use the bottled stuff, but it’s so easy to stir up a homemade teriyaki sauce, and the flavor is so much better and fresher.

Select sauté on the Instant Pot® and adjust to normal. When hot, add the oil to the pot. Add the turkey and cook for 8 to 10 minutes or until evenly browned. Press cancel. Drain fat.
Combine ponzu, mirin, brown sugar, ginger, garlic, white pepper, and cayenne pepper in a bowl. Mix well. Pour over the turkey. Secure the lid on the pot. Close the pressure-release valve.
COOK
Select poultry and adjust cook time to 8 minutes. When cooking is complete, use a natural release to depressurize. Press cancel. Remove turkey to a serving plate. Let rest for 5 minutes, then slice.
Select sauté on the pot and adjust to normal. When the cooking juices come to a boil, whisk in the cornstarch mixture and cook for 1 minute. Press cancel.

Pour sauce over the turkey or serve on the side.
