Braised Salmon in Tomato-Caper Sauce

Serve this Mediterranean-style salmon with cooked rice or polenta and a crisp green salad.

PREP

Select sauté on the Instant Pot® and adjust to normal. Add olive oil to pot. When the oil is hot, add shallots and red sweet pepper. Cook, stirring occasionally, until shallots and pepper are just softened for about 3 minutes. Add white wine. Simmer for 2 minutes. Stir in tomatoes, capers, oregano, thyme, and crushed red pepper. Press cancel. Place salmon fillets in sauce. Sprinkle with salt and pepper. Secure the lid on the pot. Close the pressure-release valve.

COOK

Select manual and cook at high pressure for 3 minutes. When cooking is complete, use a quick release to depressurize.

SERVE

If desired, serve with cooked rice. Top with parsley before serving.
