Nutritional yeast—not the same type used for baking bread—is added to many vegan recipes to give them a savory, cheesy flavor. Look for it in the health foods section of your supermarket.

PREP
Select sauté on the Instant Pot® and adjust to normal. When hot, add the oil to the pot.
Add the onion and cook, stirring, until softened, for about 2 to 3 minutes. Add the garlic, paprika, and liquid smoke. sauté for 1 minute more. Add the black-eyed peas and the water. Press cancel. Secure the lid on the pot. Close the pressure-release valve.
COOK
Select manual and cook at high pressure for 25 minutes. When cooking is complete, use a natural release to depressurize.
SERVE
Stir in the yeast and salt and pepper to taste.
