We love this trick: The streusel topping is browned on Sauté in the Instant Pot® before being removed and set aside to cool, so it stays crunchy even after it’s sprinkled on the cooked sweet potatoes right before serving.

For the streusel topping, select sauté on Instant Pot® and adjust to normal. When hot, add the butter to the pot. When melted, add the oats, coconut, and pecans. Cook for about 5 minutes until lightly toasted, stirring frequently. Stir in brown sugar and cinnamon. Press cancel. Pour onto a plate to cool.
Add sweet potatoes to the pot. Pour orange juice over the sweet potatoes and toss so that all sides of the potatoes have been coated with orange juice. Secure the lid on the pot. Open the pressure-release valve.
COOK
Select slow cook and adjust to more. Cook for 3½ hours until potatoes are very tender.
SERVE
Add orange zest to undrained potatoes and mash until smooth. Transfer to a serving bowl. Sprinkle with streusel topping.
