You can buy jarred sauce, but it doesn’t taste as fresh as sauce you make yourself. By cooking it in the Instant Pot®, you not only you get rich flavor in the fraction of the time it takes to cook it on the stovetop, but there’s no spattering, either!

Select sauté on the Instant Pot® and adjust to normal. When hot, add 1 tablespoon of the oil and the garlic. Cook and stir for 10 to 20 seconds or until garlic is fragrant but not brown. Press cancel. Add undrained tomatoes, tomato sauce, the water, Italian seasoning, salt, black pepper, and crushed red pepper to the pot. Secure the lid on the pot. Close the pressure-release valve.
COOK
Select manual and cook at high pressure for 10 minutes. When cooking is complete, use a natural release to depressurize.
serve
Using a potato masher, mash sauce to desired consistency (or for a smooth sauce, use an immersion blender or regular blender to blend sauce until smooth). Stir in remaining olive oil, the basil, and parsley. Serve as desired.
