This silky applesauce is so delicious, you’ll forget that it’s actually good for you. Use a mix of apples for a more complex flavor.

PREP
Core, peel, and chop the apples. Combine the apples, cider, the water, honey, lemon juice, cinnamon sticks, and salt in the Instant Pot®. Secure the lid on the pot. Close the pressure-release valve.
COOK
Select manual and cook at high pressure for 8 minutes. When cooking is complete, use a natural release to depressurize. Press cancel.
SERVE
Remove cinnamon sticks. Use a potato masher to mash the applesauce or, working in batches, transfer to a food processor and process until smooth (or use an immersion blender in the pot).
If applesauce is thin, select sauté and adjust to less. Cook and stir for 10 to 15 minutes or until desired consistency. Press cancel.
