Using a mandoline to slice the oranges will give you the thinnest, most even slices.

Thinly slice the oranges, removing and discarding any seeds. Cut the orange slices into quarters. Add oranges and the water to the Instant Pot®. Secure the lid on the pot. Close the pressure-release valve.
COOK
Select manual and cook at high pressure for 10 minutes. When cooking is complete, use a natural release to depressurize. Press cancel.
Remove the lid and stir in sugar. Select sauté and adjust to normal. Bring mixture to a full boil. Boil for 5 to 10 minutes or until mixture reaches gel stage (220°F), stirring frequently. Press cancel.

Ladle into half-pint glass jars. Seal jars. Store for up to 3 weeks in the refrigerator.
