‘ENGLISH BREAKFAST’ FRITTATA

WHO DOESN’T LOVE A FRY UP? THE SMELL ALONE CAN REALLY GET THE APPETITE GOING, BUT ALL THAT SATURATED FAT SIMPLY ISN’T GOOD FOR YOU. INSTEAD, BY MAKING A FRITTATA WITH ALL THE INGREDIENTS OF A FULL ENGLISH BREAKFAST, YOU’RE GETTING ALL THE FLAVOURS, WITHOUT ALL THE FAT. TO ROUND IT ALL OFF AND IN KEEPING WITH THE NAME, SERVE SOME BAKED BEANS ON THE SIDE.

OVEN – BAKING DISH

100g bacon rashers, chopped

2 pork sausages, sliced

1 onion, chopped

1 cup sliced mushrooms

1 cup halved baby tomatoes

1 round feta, crumbled

8 eggs

1 tsp tomato paste

1 Tbsp Greek yoghurt

salt and pepper to taste

1 tsp dried mixed herbs

baby tomatoes for garnishing

1.Preheat the oven to 200°C.

2.Place the chopped bacon and sausage slices into a greased baking dish and cook for approximately 10 minutes. Remove from the oven and add the onion, mushrooms, baby tomatoes and feta.

3.In a bowl, whisk the eggs together with the tomato paste and yoghurt. Pour the mixture into the other ingredients, season with salt, pepper and mixed herbs and stir together.

4.Bake for approximately 15 minutes. Switch on the grill and grill for 5 minutes or until the top is golden. Scatter over some baby tomatoes and serve hot or at room temperature.
