ROASTED RED ONION AND CELERY SALAD

THE UNUSUAL COMBINATION OF ROASTING BOTH THE ONION AND THE CELERY CREATES A LOVELY CHARRED EFFECT, WHICH IS BOTH VISUALLY APPEALING AND TASTY. THE ONIONS SOFTEN AND ALMOST CARAMELISE, WHICH COMPLEMENTS THE TANGINESS OF THE CHEESE. IT’S ALSO HEALTHY, PROVIDING YOU WITH LOADS OF ANTIOXIDANTS.

OVEN – BAKING SHEET

2 red onions, cut into wedges

1 cup chopped celery

2 Tbsp olive oil

2 cups fresh rocket

1 cup baby spinach

salt and pepper to taste

4 Tbsp crumbled blue cheese

DRESSING

4 Tbsp olive oil

2 tsp balsamic vinegar

¼ tsp minced garlic

salt and pepper to taste

1.Preheat the oven to 180°C. Grease a baking sheet.

2.Arrange the onions and celery on the prepared sheet, drizzle over the olive oil and toss all, coating well in the oil.

3.Roast in the oven for approximately 15 minutes, then once the onion and celery are charred, remove and leave to cool to room temperature.

4.Place the rocket and baby spinach on a platter and spoon the onion and celery on top. Season with salt and pepper. Scatter over the blue cheese.

5.Mix the dressing ingredients together and pour over the salad.

6.Serve at room temperature.
