SUPER-DUPER STUFFED HERB BREAD
ONE OF MY FAVOURITE FOODS AT A BRAAI IS THE GARLIC BREAD! HERE IT’S ELEVATED AND GIVEN A NEW LEASE ON LIFE WITH THE ADDITION OF MUSHROOMS, BABY SPINACH AND MOZZARELLA CHEESE. IT MIGHT NOT BE AT THE TOP OF THE HEALTHY LIST, BUT IT SURE IS AT THE TOP OF TASTY.
OVEN – BAKING SHEET
1 ciabatta or country loaf
½ cup grated mozzarella
½ cup cream cheese
2–3 mushrooms, sliced
½ cup finely chopped baby spinach
¼ tsp minced garlic
4 Tbsp Greek yoghurt
2 Tbsp tangy mayonnaise
2 tsp chopped fresh dill
2 tsp chopped fresh parsley
salt and pepper to taste
1.Preheat the oven to 180°C.
2.Cut the bread in slices, but not all the way through.
3.Combine the remaining ingredients until well mixed, then spread between the slices. Wrap the bread in foil, place on a baking sheet and bake for approximately 20 minutes or until the cheese has melted and the stuffing has softened.
4.Serve immediately.
