MIXED SEAFOOD CURRY

THIS IS A SURPRISINGLY QUICK CURRY TO PULL TOGETHER, BUT IT’S DELICIOUSLY SPICY. WHETHER YOU USE THE PREMIXED PACKETS OF SEAFOOD OR WHATEVER SEAFOOD MIXTURE TAKES YOUR FANCY, THE DIFFERENT TEXTURES AND FLAVOURS ALL BLEND SEAMLESSLY IN THE TOMATO MIXTURE. I LIKE SERVING THIS WITH HOMEMADE TZATZIKI AND WHITE RICE ON THE SIDE TO ROUND IT OFF, BUT FEEL FREE TO MIX IT UP WITH WHATEVER APPEALS TO YOU.

STOVE TOP – DEEP PAN

1 tsp olive oil

1 tsp ground coriander

½ tsp black mustard seeds

1 tsp grated fresh ginger

1–2 fresh chillies, finely chopped

1 tsp chopped garlic

1 tsp garam masala

1 tsp cumin

2 × 400g cans chopped tomatoes

salt and pepper to taste

500—800g seafood mix

2 tsp lemon juice

chopped fresh parsley for garnishing

tzatziki to serve

cooked white rice to serve (optional)

1.Heat the olive oil in a deep pan and fry the coriander, mustard seeds, ginger, chilli, garlic, garam masala and cumin for about 1 minute. Stir in the tomatoes.

2.Season with salt and pepper, then simmer for approximately 5 minutes. Add the seafood mixture and lemon juice, then cook for a further 2–3 minutes or until the seafood is cooked.

3.Serve with chopped parsley, tzatziki and white rice (if using).
