EGG BAKE DELIGHT
THIS EASY BREAKFAST CASSEROLE WORKS JUST AS WELL FOR DINNER, AND IS AN EXCELLENT RECIPE TO PLEASE A CROWD AS IT’S SO EASY TO DOUBLE UP (JUST REMEMBER TO ALTER YOUR COOKING TIME). IT’S COLOURFUL AND HEALTHY, PROVIDING THE NUTRIENTS YOU NEED TO START YOUR DAY.
OVEN – DEEP DISH
2 cups roughly chopped spinach
2 tomatoes, sliced
2 Tbsp chopped onion
2 Tbsp chopped fresh basil
4 Tbsp plain yoghurt
1 tsp wholegrain mustard
salt and pepper to taste
4 Tbsp grated cheddar cheese
4 eggs
1.Preheat the oven to 200°C and grease an oven dish.
2.Arrange the spinach over the base of the dish. Place the tomatoes on top of the spinach. Scatter the chopped onion and basil on top.
3.Mix the yoghurt and mustard together and pour over the vegetables. Season with salt and pepper. Sprinkle over the cheese. Carefully crack open the eggs and position them on top of the cheese.
4.Bake until the egg whites have set and the eggs are done to your liking. Season again if necessary, garnish as desired and serve immediately.
