SWEET CHEESE SEDUCTION
THIS FINAL ENDING TO A MEAL PROVIDES A PLAYFUL MIX OF FLAVOURS AND TASTE COMBINATIONS, WITH THE SWEET RANGING FROM THE SUBTLE, THROUGH SWEET BUT SOMEWHAT TART STRAWBERRY, TO THE ULTIMATE SWEETNESS OF PURE SUGAR. THE CREAMY YET MELLOW FLAVOUR OF MOZZARELLA IS A GOOD CONTRAST. ALL IN ALL, THE PERFECT WAY TO END OFF A SPECIAL MEAL.
STOVE TOP – SMALL POT
150g sugar
200g mozzarella balls (bocconcini), patted dry
150g blue cheese, chopped into chunks
500g strawberries, hulled
500g raspberries
balsamic glaze for drizzling
fresh mint or edible flowers for garnishing
1.Heat the sugar in a small pot, until it begins to caramelise.
2.Arrange the mozzarella balls and chunks of blue cheese on baking paper, drizzle the sugar caramel over all and leave to cool. Once cool, refrigerate until ready to serve.
3.To serve, scatter the strawberries and raspberries around a platter. Place the cheeses in between. Drizzle any residual sugar caramel over the cheeses. Drizzle the balsamic glaze over the berries and garnish everything with mint leaves or edible flowers.
