Charlie’s Penne with Butternut Squash Sauce
Take a break from marinara with this nutrient-filled sauce. Butternut squash gives it subtle sweetness and a gorgeous orange hue. This pasta dish has the essence of mac and cheese with much less fat.
8 ounces penne pasta
2 tablespoons heavy cream
1 cup Butternut Squash Puree
2 tablespoons grated Parmesan cheese
Cook pasta according to package directions. Drain and set aside. In the same pot heat the cream until it comes to a simmer. Add butternut squash puree, stir until well combined. Add pasta and cheese, toss well, and serve.
