Quick Sautéed Peas

Instead of tossing peas in the microwave, make them a little more special. Frozen peas work perfectly for this recipe—no need to thaw! Puree with some chicken stock, and you have a fresh and fast pea soup.

2 teaspoons olive oil

2 cups frozen peas

Juice of 12 a lemon

Sea salt or kosher salt

Heat oil in a medium skillet over medium-high heat. Add peas and lemon; season with salt to taste and cook for 3 to 4 minutes until warmed through.
