1 pound small red potatoes
2 tablespoons butter or buttery spread such as Smart Balance
1⁄2 teaspoon kosher salt
1⁄4 teaspoon black pepper
1⁄4 cup fresh chopped dill
Place potatoes in a medium saucepan and cover with cold water. Bring to a boil, reduce to a simmer, and cook for approximately 20 minutes, until potatoes are fork-tender. Drain and return to pot. Add butter, salt, pepper, and dill and smash with a fork or potato masher.
